Characteristics of Kokihi (Dark Scarlet)
Enjoy the aroma and lingering finish of Kokihi in its ample bowl. It is recommended for mature, aged wines, typically Cabernet Sauvignon and Merlot, as found in Bordeaux. The phrase "Kokihi refers to a very deep scarlet color that has become black. For example, like a mulberry that is red at first, but later turns black," comes from the "Rekisei Fukushoku Ko" (Studies on Historical Attire) of the Meiji era. Kokihi is a purplish-dark red, dyed with madder and purple. Despite its name, the color "hi" (scarlet) is not prominent; it is a strong, dark hue. Tracing back to the Asuka and Nara periods, it was used as the color for official attire, signifying a very important and noble color. Please feel free to link it with your beverages.
